Honey - It's The Bee's Knees

Now you probably won't see any bees flying around looking like this one. But isn't it cute? I made it using this website a couple of years ago for an old post.

I started thinking about honey bees today after reading two articles about urban beekeeping in the Boston area. Take a look here and here.

It seems that the surge in urban beekeeping isn't just in the Boston area, but it's a growing nationwide trend. Part of the reason for it seems to be a reaction to Colony Collapse Disorder and the reduction in the number of honey bees.

Honey is one of my favorite things. I use it in cooking, baking, and as a sweetener in tea with lemon as my foolproof method for getting over a cold. Not only does it taste good, but it's a natural antibiotic.

I'm looking forward to trying more local honey produced by all these urban bees. Have any of you noticed more beekeepers where you live?

I love honey as well, and I was concerned that prices would jump sky-high with the advent of CCD. They didn't, though, and I was surprised. One of the best things I ever had with honey was a cheese plate of stronger varieties with honey drizzled over it and the toasted nuts as well. Stilton, chevre, and an Irish one the name of which I forget now all tasted wonderful with that bit of honey.

I absolutely love honey! My family and I go through 18 oz of local raw honey a week. I'm a raw foodist and try to include Stevia, Agave and Xylitol as sweetners in by diet too. Thanks for spreading the word about how important honey is to us on Mother Earth. I also wrote an aticle on honey.. May I share it?

Local honey is also good for allergies...a teaspoon a day does wonders.
