Happy World Nutella Day ~ Nutella Pistachio Cookies


Happy World Nutella Day! I adapted the peanut butter cookie recipe from this cook book to create a new one. Simply delicious!

Nutella Pistachio Cookies
(Makes 3 dozen)

INGREDIENTS:
  • 1/2 cup Nutella
  • 1/2 cup Smart Balance (softened)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 cups flour
  • 1/2 cup finely chopped pistachios
INSTRUCTIONS:

Combine ingredients in a medium bowl. Scoop dough by the tablespoon onto a cookie sheet. Bake at 375 degrees for about 12 minutes.

After you remove the pan from the oven, bang it hard against the counter top to get the cookies to fall and crinkle. A trick I learned from making this recipe.

OMG!!! Nutella pistachio cookies! While I have Nutella in the house, I don't have any pistachios! They will be at the top of my shopping list for this week. Can't wait to try them.

chris - I made them again during the storm, but used peanut butter instead of Nutella. Those were great too! I got pistachios that come already shelled so they were easy to use. Let me know how you like them!

I've never tasted Nutella. Never been brave enough to. Hoping someone will have some one day and I can taste and see if I like. I did make oatmeal cookies that were delish. My husband was pleased. I tend to only bake sweet stuff when we have dinner guests or on holidays. You must have a lot of discipline to bake so much yet remain so svelte!
