Ice Cream Making


Some recent writing assignments have had me driving in southern Massachusetts. Today I was in New Bedford and had the loveliest time. It was hot, but there was a nice breeze. Ahhhh. Summertime.

Today was the perfect day to break out the ice cream machine for the first time this season. What's today's flavor? Coconut Kahlua.

Here's the recipe below, if you'd like to give this flavor a try. The measurements are approximate, because I was getting rid of the end of some ingredients and just used what was left.

Coconut Kahlua Ice Cream
INGREDIENTS:

  •  1 cup Half & Half
  • 1 13.5 oz. can coconut milk
  • 1 cup vanilla rice milk
  • 1 cup granulated sugar
  • 1/2 tsp. salt
  • 2 - 3 T Kahlua
  • 1 tsp. vanilla extract
INSTRUCTIONS:
Whisk ingredients together in a medium bowl. Pour into ice cream maker and follow your ice cream maker instructions. During the summer, I keep the ice cream maker in the freezer, so it's always ready to go. It's churning right now, but it's been about 35 minutes.

So as soon as I'm done with this post, I'll be scooping it into a freezer safe container and putting in the freezer for a few hours. If you like your ice cream melty, then enjoy immediately!

This sounds dangerously good, Lisa! ;o) I don't have an ice cream maker... but have been making simple recipes for sorbet just whizzing up ingredients in the blender and freezing...YUM! Happy Summer Days ((HUGS))

tracy - The sorbet sounds good! I've been doing sorbet too. And last night I froze a fruit smoothie, which is kind of a combination of the two.

suldog - The heat's supposed to break tomorrow and I'll be so glad!!
