Ice Cream Making
Today was the perfect day to break out the ice cream machine for the first time this season. What's today's flavor? Coconut Kahlua.
Here's the recipe below, if you'd like to give this flavor a try. The measurements are approximate, because I was getting rid of the end of some ingredients and just used what was left.
Coconut Kahlua Ice Cream
INGREDIENTS:- 1 cup Half & Half
- 1 13.5 oz. can coconut milk
- 1 cup vanilla rice milk
- 1 cup granulated sugar
- 1/2 tsp. salt
- 2 - 3 T Kahlua
- 1 tsp. vanilla extract
Whisk ingredients together in a medium bowl. Pour into ice cream maker and follow your ice cream maker instructions. During the summer, I keep the ice cream maker in the freezer, so it's always ready to go. It's churning right now, but it's been about 35 minutes.
So as soon as I'm done with this post, I'll be scooping it into a freezer safe container and putting in the freezer for a few hours. If you like your ice cream melty, then enjoy immediately!
Happy National Ice Cream Month!

Many thanks for you loving comment at my place. We are still in great shock & sadness over the tragedy that happened here this past weekend. Thank you for thinking of us! ((HUGS)) P.S. We made raspberry sorbet at the weekend for much needed treat--it was sooo good! :o)
tracy - You were the first person that I thought of when I heard the news. So glad that you and yours are safe and that you were able to relax with some sorbet making. : )
