Eater Beware. These Cupcakes Are Addictive.


You've been warned. Do NOT make these cupcakes unless you plan on doing so repeatedly. Seriously. They are that good!

I found a recipe for hot milk sponge cake over on the wonderful blog An Inch of Time. Since I have to have some semblance of restraint, I cut the recipe in half and only made a dozen cupcakes. Also, as usual, I used Smart Balance instead of butter and vanilla rice milk instead of regular milk.

I made mocha frosting from scratch and didn't use a recipe, because I just throw things together. I used the remaining half a stick of softened Smart Balance, maybe 2 cups of powdered sugar, a sprinkle of salt, about 1/4 cup cocoa powder, around a teaspoon of Starbucks VIA Ready Brew dissolved in about 2 tablespoons of hot water, and about a teaspoon of vanilla extract. Combine until you get the right consistency.

The first time that I made the cupcakes, I forgot to take pictures. They were gone so fast! Of course, I had to make them again immediately. So I could take pictures just for you. Voila! Aren't you glad that I did? : )

I don't bake any more except for holidays and when I'm having folks over. I love cupcakes, pies, cookies and find it very hard to restrain myself.

can-can - Restraint is hard. I'm trying to keep myself from baking them again tonight!
