Cream of Tomato Soup: The easiest soup recipe ever!
This blog hasn't been very foodie friendly lately. Not many recipes at all. But that doesn't mean that I haven't been cooking and baking behind the scenes. My stove, oven, microwave, and blender get worked out thoroughly every week. Fruit smoothies are a must. Which reminds me that I need to get some more smoothie friendly fruit.
I'm refining my chocolate chip cookie recipe. Practice makes perfect! And I've just been generally trying to stay warm.
The snow really started stressing me out. As you can probably tell from the last post. But it's also made me get back to my meditation practice, which is #98 on my life list. I remember when I first started meditating, I'd get antsy after just a minute. Maybe even less. Now it's five minutes before I start squirming and checking the time.
Meditation is a much more relaxing process now. Hopefully it's having some other benefits too that I've yet to notice. Maybe it's what made me realize how easy it is to make cream of tomato soup. A grilled cheese sandwich with cream of tomato soup is probably one of the the best winter comfort food meals ever.
Buying cream of tomato soup is fine. But it's much cheaper, healthier, and literally just as easy and fast to make your own. You can make a big pot of it and depending upon how many people you have to feed, you'll probably have some leftovers.
A while ago, I remembered hearing a super easy recipe using canned crushed tomatoes and cream. I looked for it, but didn't find it, so I improvised my own. Crushed tomatoes were on sale a few weeks ago, so I already had a few cans. Plus I had cream remaining from a few recipes. Why not just throw them together and see what happened? I didn't measure. I looked at the color. Tasted along the way. And noticed the smell.
I'm reading With Bold Knife and Fork, by M.F.K. Fisher and I'm pretty sure that she would disapprove and say this recipe is NOT proper at all. Oh well. I'm putting it down here anyway. It's not exact and certainly can be refined to your tastes, but it's something to go on. I'm certainly enjoying this soup enough to make it again. I hope you will too.
Cream of Tomato Soup
2 (28 oz) cans crushed tomatoes
~ 1 cup light cream
~ 1/2 cup brown sugar
~ 1 tsp. lemon pepper
Combine ingredients and bring to a boil in a large covered pot. Eat. : )
