A Simple Autumn Cake
You can bake from scratch. Even though you may have never tried it before, you can do it.
If I can convince even one of you of this today. If I can make you believe enough to try and bake a cake that you love, then you will absolutely make my day. And you'll have your cake and you can eat it too! : )
The cake above? So simple. So good. Let me break it to you gently.
It started with this recipe for Norwegian Apple Cake that I found on Tracy's blog last year. I baked the cake and loved it! So tasty!
Well, last night I was cooking up a storm! I wanted to make a little something sweet in the realm of a single layer cake. I remembered this apple cake recipe, but I didn't have any apples in the house.
What I did have was some leftover pumpkin puree. Maybe about 3/4 of a cup. So I decided that I would adapt the recipe and see what happened. I added another cup of flour to balance out the additional moisture, then made a few more changes from there.
I love this cake! It was really fun to make and easy!
The measurements for the changes are very rough, because I didn't write them down. I improvised the topping and just threw things together without measuring. Maybe listening to Miles Davis helped with that!
Here's the recipe below. Please let me know if any of you try it or if you have any questions. And as always, adapt away to your hearts content!
Simple Autumn Cake
1/2 cup Smart Balance( softened)
2 eggs
3/4 cup sugar
2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
~ 1 T vanilla rice milk
~ 2 tsp. vanilla extract
~ 3/4 cup pumpkin puree
~ 1 T pumpkin pie spice
Combine ingredients in a medium bowl. Taste the batter to see if you like it. If you think it needs something more, add it. If you think it needs something less, make a note for next time.
Topping ingredients: In a separate bowl, combine these and set aside.
~ 1/4 cup brown sugar
~ 1/2 cup raisins
~ 1/4 unsalted dry toasted pecan pieces (from Trader Joe's)
Grease and flour a round cake pan. Add the batter. Sprinkle the topping on top of the batter. Bake at 400 degrees for about 40 minutes. Let cool before cutting.
If you're pressed for time, this would be a nice simple cake to bring to someone's house for Thanksgiving. It's cheaper than store bought, more healthy, and just as easy as a box mix. Enjoy!
