Nope. Not for a Klondike Bar. What would you do for some homemade ice cream?

Would you consider jumping out of a plane?
Would you actually jump out of a plane? For some delicious Vanilla Coconut Ice Cream?



No? They didn't either. My cousin C sent me some pictures of him skydiving on the 4th of July and I had to find a way to use them. Pretty cool huh?

Well, I wouldn't jump out of a plane for this ice cream, or for any other reason actually. But I have to say that this is some really good ice cream. I finally figured out a way to make a vegan and dairy free ice cream with a super creamy texture.

What's the secret? Coconut milk and WestSoy Vanilla Soy Shake. I used rice milk before and it was good, but not creamy enough. I'll be trying some more flavors now that I've got it figured out.

Vanilla Coconut Ice Cream

2 cups WestSoy Vanilla Soy Shake
1 cup coconut milk
pinch of salt
1 T vanilla extract
3/4 cups sugar

Whisk ingredients together in medium bowl. Put in ice cream maker for about 45 minutes or until you have a creamy consistency. Scoop out and put in freezer safe container. Store in freezer. Enjoy!

1st off...how creamy and rich is the ice cream? That's my favorite part of ice cream. How different is it from dairy?

I had some coconut vanilla ice cream in ogunquit last year that was to die for! That said I would not jump out of a plane under any circumstances.

Yay! Ice cream! By the way, I thought I would let you know that you and Nina inspire me to be creative in the kitchen, and I made a kick a$$ fruit salad the other day (added "spices" and such which I would totally not do before now)...all by myself!

Wow. I don't know if i could jump out of an airplane but i could definitely finish that whole batch of Vanilla-coconut ice cream. I like you recipe, the combination of Vanilla soy and coconut milk sounds really good!
OK I can't imagine myself ever jumping out of a perfectly functioning airplane, but that ice cream looks fab! I love coconut in anything :)

I make soy icream with tofu too, it makes it very creamy and rich...add some dairy free oreos and VIOLA!

This looks wonderfully creamy and perfectly white! I'll leave the airplane jumps to your family, they sure look better than I ever will if I ever jump out of an airplane for fun!
My legs just turned to jello looking at those pictures, so I think you know what my answer would be!

bleeding espresso - LOL! I love the "perfectly functioning airplane" part. I didn't look at it that way. I guess I would jump out of a completely messed up malfunctioning plane that I was unlucky enough to be aboard - assuming I had a parachute.

Anali, thanks for visiting my blog! I have not ever been a fan of making my own ice cream, but the Vanilla Coconut recipe may have just changed my mind! Coconut is dear to me-Grew up surrounded by them and the many uses they have in the Puertorican kitchen. So...I will let you know if I venture to try it!!! Great blog, BTW!
