Yada, Yada, Frittata
Only a month ago, I mentioned here how much I loved Starbucks' Florentine Egg Sandwich. Earlier today, I read on the Starbucks Gossip blog that the warm breakfast sandwiches would soon be coming to an end. I was hoping it was just a nasty rumor, but unfortunately I confirmed this news on the real Starbucks website.
In this letter, once-again-Starbucks-CEO, Howard Schultz , states that not only will they be closing some stores, but that the sandwiches will be discontinued by the end of fiscal year 2008. Many customers complained that the smell of the sandwiches interfered with the coffee aroma. Yada, yada, yada. No more favorite sandwich. So I decided to make my own little portable egg meal. A mini-frittata!
This post, refers to this post, which lists a bunch of similar posts including this one, which I modeled my frittata after. I didn't measure my ingredients, so I can't give you a real recipe, but I used either 8 or 10 eggs, a pinch of salt, a little rice milk, pepper, garlic powder, oregano, spinach, Asiago and Romano cheeses.
I whisked the eggs, mixed everything together and poured the mixture into a greased mega-muffin pan, which makes six huge muffins. I baked this at 350 degrees for about 45 minutes and they were done. They had to cool for a bit before I could remove them. Ta da! I can put these in foil, bring them to work and heat them up there. Problem solved!

nance - It was frozen spinach. I just microwaved it, drained it, then threw it in. And the microwave thing is kind of scary. Oh well. I guess what's done is done.

so simple - I do plan on making them and freezing them at some point, but these are going pretty fast! I do like the idea of these as appetizers too. I have a mini-muffin pan that I haven't used yet...
