A Waffle In Progress


I have a fair number of cookbooks. Yet, I seldom use them. I like to mix and match whatever ingredients happen to be in the house. When I do use recipes, I often stick with the tried and true. I had some canned pumpkin leftover from the bread that I made a couple of weeks ago and needed to use it. I thought that pumpkin pancakes or waffles might be nice. I hadn't made either for quite some time and the cold rainy weather was inspiring me to make some comfort food. I have a recipe that I usually use and adapt as needed. But this time, I decided to break away from the usual and get a little wild by pulling something different from my bookshelf.

Pancakes From Morning to Midnight, by Dorie Greenspan, seemed like a nice cookbook to try. I slightly adapted the Pumpkin Pie Pancake recipe and made waffles one morning and pancakes the next. The flavor wasn't quite what I had hoped and the texture was a bit too squishy in both cases.

I haven't given up on the recipe yet, but I'll add more spices and flour the next time and possibly reduce the amount of eggs and milk. For now, I won't give the recipe, since it's still a work in progress.

I'm totally the same way with cookbooks. But I mix and match out of necessity, cause I'm just not organized enough to have all the ingredients on hand :-)
