Single Serving Nutella Sandwich Cookies #nutelladay


Up until today, I wasn't sure if I was going to bake for World Nutella Day. But the hashtags got me. #nutelladay. Have you seen it?

Don't get me wrong. I was going to eat Nutella. That was never in question. I was maybe going to spread some on a banana. Which is quite good by the way.

Then I started thinking about single serving desserts and thought maybe I could whip up something quickly. All the snow is quite conducive to baking and I knew that I had enough Nutella to see me through. Always keep a spare!

I adapted this recipe for single serving sugar cookies. Mostly I just doubled the recipe, but used less sugar proportionately and used a flour mixture combining all-purpose flour with whole wheat flour. Also, I used cookie cutters to make the cookies cuter.

The recipe made nine cookies and I ate the extra one to even things out. You just might have to do the same!  : )

While this isn't quite single serving, it made four sandwich cookies. I had two and so did G. We loved them!


Single Serving Nutella Sandwich Cookies
 
Ingredients + Instructions

1/2 cup flour
2 T sugar
1/4 tsp. baking powder
1/8 tsp. salt
1/4 cup Smart Balance softened (butter, margarine, etc.)
1 T vanilla almond milk (soy, rice, regular, etc.)
1/2 tsp. vanilla extract

Set aside a cookie sheet and Nutella to spread on the cookies. Preheat oven to 350 degrees.

Combine ingredients in a small bowl until you have smooth dough. Place bowl in freezer for about five minutes.

Roll out dough on a floured surface. Use cookie cutters to shape cookies. Bake at 350 degrees for about 15 minutes.

Remove from oven and let cool for about 5 minutes. Use a spatula to turn cookies over onto a plate. Spread Nutella generously on half of the cookies. Then top with the remaining cookies. Eat and enjoy!
