Recipe: Nutella Chocolate Mug Cake



Happy New Year! I hope 2013 is treating you well so far.

Things aren't too bad here, but it's been so cold the past few days. I'll try and remember my shivering when it's 100 degrees this summer!

Starting last week, I become mildly obsessed with the idea of chocolate mug cake. There are a ton of recipes out there and I tried one, but wasn't too happy with the results. From what I see, many have no salt, use oil instead of butter, and require microwaving at least three minutes.

Three minutes is too long and the cake becomes rubbery. No salt results in a batter that's too bland. And I find the oil to taste slightly off in a chocolate cake.

Then I started thinking that a chocolate mug cake with Nutella would be awesome. I was hoping that I invented the idea, but a quick search revealed a ton of recipes already for that one too.

Unfortunately my idea isn't the first, but I made the recipe my own. I changed the problem areas in the recipes that I found and made a cake that is just as good as one that you bake in the oven.

This recipe is super quick, about ten minutes total, and only one serving, so you won't completely break your New Year's Resolution to eat healthier and lose weight. Sort of....

Unlike some of the other recipes, I found it easier to use a small mixing bowl and whisk together the ingredients, then pour the mixture into the mug.


If you put the dry ingredients in a container, you could keep it ready for chocolate Nutella emergencies, so you can whip this up even faster anytime!

Also, you could mix everything up and put it in a container to bring to work. Then at the office, pour it in a mug and have freshly baked cake for your afternoon break! Much cheaper than Starbucks! I love them, but can't go there all the time.

Here's the recipe below. I hope you try it. Enjoy!

Nutella Chocolate Mug Cake

Ingredients:
  • 2 T flour
  • 1/4 tsp. salt
  • 3 T sugar
  • 1 T cocoa powder
  • 1 T Smart Balance (butter, margarine, etc.)
  • 1 egg
  • 2 T Nutella
  • 1/4 tsp. vanilla extract
  • 2 T vanilla rice milk (soy milk, almond milk, etc.)
Powdered sugar for dusting
A large microwave safe mug

Instructions:

Place Smart Balance and Nutella in a small bowl. Microwave for a few seconds until softened. Add the remaining ingredients and whisk until combined.

Pour mixture into mug and microwave for about two and a half minutes on high. The mixture will puff up over the top, but that's fine. Note: You do not need to add any leavening.

When done, remove mug from the microwave, then use a knife to loosen the sides and empty the cake out onto a plate. Dust with powdered sugar. Eat!
