Recipe: Coconut Nutella Swirl Ice Cream

Back in junior high, one of my favorite songs was Do Ya Wanna Get Funky With Me? by Peter Brown. I also loved his song Dance With Me. I know this is a huge digression, but I just read that he was the first artist to have a million selling 12" single. And he also wrote Material Girl for Madonna.

Well, the lyrics, "It's so hot. I'm burning up." kept running through my mind yesterday as I tried not to melt to the floor a la Wicked Witch of the West despite the air conditioning.

So what did I do? I made my first homemade ice cream of the season. That's what! I used my Vegan Vanilla Coconut recipe with a couple of changes. I haven't been able to find WestSoy Soy Shake in the store, so I used vanilla rice milk. Then I addded Nutella at the end. Wow! I love how the Nutella gets all fudgy from the cold of the ice cream.

This recipe is still essentially vegan and dairy free except for the skim milk and whey contained in Nutella. Here's the recipe below. Enjoy!

Coconut Nutella Swirl Ice Cream

1 can unsweetened coconut milk (13.5 oz)
3 cups vanilla rice milk
1/4 tsp. sea salt
1 tablespoon vanilla extract
1 cup sugar
1/2 jar Nutella (about 7 oz)

Combine ingredients and put in your ice cream maker. Let churn for about 45 minutes. Scoop out ice cream and put into large container. Swirl in Nutella. Freeze until solid or until you can't wait any longer. Guess which one I chose? Nothing wrong with melted ice cream.

Melted ice cream prepares the sinuses to prevent brain-freeze... you did well, or, should I say, you had excellent instincts... well, in the case of ice cream... what you do with liver is still to be heard... thanks for a great recipe and sharing... do hope the weather treats you all better, before long...

Oh my . . . Nutella!!! There's nothing like it and mixed with coconut!!! Sounds like an Almond Joy only with hazelnuts. Thanks so much for the recipe. I definitely will try it. Oh and I won't be able to wait until it freezes either!

Can this ice cream be made without an ice cream maker, if so how?

fatima - Welcome! I've only made ice cream with an ice cream maker. I just did a quick Google search and found this blog post.

My recipe is not custard based though, so I'm not sure how it would work. You can always try it and see what happens. Best of luck!
