Festivus Chocolate Pudding


I've never actually celebrated Festivus. But I remember the Seinfeld episode and have been fascinated by it ever since.

Over the last few years, I've been reading about how people have started celebrating it. There is even an official website. You can buy the book and air your grievances. There is quite a list of grievances going and I added one myself. It's better than going on a rant here!

If you also have some grievances to air, you may be in the mood for some chocolate. I've made a special chocolate pudding to submit as an entry to the pudding event for Sugar High Friday#38. I adapted this chocolate pudding recipe by adding some holiday cheer.

SHF #38 - The proof is in the Pudding!

I've never made chocolate pudding from scratch before and this was much easier than I thought. It took the same amount of time that it would take to make packaged pudding. Plus, I think this may be some of the best chocolate pudding I've ever had. It's long gone now.

Festivus Chocolate Pudding
(serves 4)

3 T cornstarch
1 cup eggnog
1 1/3 cup vanilla rice milk
1/2 cup sugar
1/2 cup unsweetened cocoa powder
pinch of salt
1 T Peppermint Schnapps

In a small bowl, use a small wire whisk to combine 1/3 cup rice milk and cornstarch until smooth. Set aside. In a saucepan over low to medium heat, add the remaining cup of rice milk, eggnog, salt, and cocoa powder. Use a large wire whisk to combine ingredients. Whisk constantly until smooth and mixture starts to thicken. Remove the pan from the heat and stir in the Peppermint Schnapps. Pour the pudding into a container and cover with plastic wrap. Refrigerate for a few hours, if you can wait that long!

So you will not make any packaged pudding anymore? ;-) As you said it's easy and I think also more healthy, as you know what ingredients you use.
