I'm Not Bluffing. I Made English Muffins.

I love Kim O'Donnel's food blog on washingtonpost.com. She always has something new and an interesting story too. Recently she had a recipe for English Muffins. Check it out here. Kim adapted a recipe from a blog winosandfoodies.com, which is written by Barbara Harris. And Barbara found the recipe from another place... Well, you get the picture. This recipe is making its way around the world, with a few changes as it crosses time zones.

I would have never thought to make my own English Muffins. I don't know why. I guess because I buy them on a somewhat regular basis. My favorite kind is Thomas' Honey Wheat. I usually put peanut butter on them for a snack or breakfast. I just tried their bagel bread recently and it's pretty good too. And no, unfortunately I'm not receiving any money from Thomas' for this post. I've noticed that English Muffins are getting rather expensive unless they are on sale and I haven't been buying them as much. When I saw this recipe, it looked fairly simple and I figured that I would adapt it to make honey wheat.

I think I made the dough Tuesday night. I still didn't feel too great on Monday. I hurt my back a couple of weeks ago and had a shooting pain from my back down my left leg. I'm feeling better, but I've still been trying to take it easy. I let the dough rise overnight, so it wouldn't be so much work to do all at once. To adapt the recipe, I used 2 cups all-purpose flour and 1 cup whole-wheat flour. I used one packet of yeast, which I don't think was enough. I'm going to try two next time. I changed the liquid portion to 1/4 cup honey, 1/4 cup milk and 3/4 cups of water.

The dough didn't rise that much, so the muffins are a little flat, but they still taste really good. And sadly, there are no nooks and crannies. Maybe next time.

Hi Anali - It's amazing how these muffins have travelled the world. Everyone plays around the with the original recipe until they discover what suits them best.

I love your little black doll. I don't know who Don Imus is but I thought your post very powerful and I really understand what you are saying.

Not knowing who Don Imus is strikes me as a good thing Barbara. If you Google images of 'asshole', he's probably one of the first results. :)

My grandmother used to make homemade sourdough english muffins--soooo good!

Anali~you're an ambitious baker! Do you think I could sign up for lessons?

anali--anali must mean "kitchen warrior." you are fearless when it comes to baking and adapting recipes. let me know how the second try comes out. i hate making anything with yeast; it can be unpredictable. but i do have a great recipe for light-as-air belgian waffles that take yeast--you can mix most of the batter overnight and simply add the egg the next morning when you've got the waffle iron hot and ready to go. if you're a waffle girl, let me know.

Never thought about making english muffins but I am now tempted. Thanks to Barbara and Kim. What a dick Don Imus is...there has been a lot about him on the talkback radio here. I know people love Shock Jocks but what did those women do to deserve that venom.
By the way an English relative sent me a black doll in the early 50's. It was dressed in a pale blue silk dress and a white with blue edged crochet hooded cape. I loved it. It was so unusual, I was the toast of my friends.

No nooks and crannies?! Fuhgeddaboutit. I like Thomas' corn english muffins with sunny side up eggs and american cheese and bacon, all mushed up together on the plate. Mmm. Maybe I'll make breakfast for dinner.

I loved how the muffins turned out, I thing the rising thing maybe a bit overrated.
I hope your back feels better soon, they just take a while to heal. :-/

barbara - Welcome! The lucky muffins don't even need a passport! And thank you for the kind words about my post and my doll. ; )

karrie - Those muffins must have been wonderful! Somehow anything made by a grandmother tastes wonderful. It must be the love!

tsiporah - Awww! You're so sweet! Thanks!

tera - Thank you! They are pretty tasty. I have only two left!

asha - Yum! Spicy cream cheese sounds really good. I always think of the sweet stuff first, but savory would be good too. Have a great weekend!

amisha - I don't know why English muffins seem so daunting, but I guess most of us felt the same way about them. It is strange, especially for those of us who are bread bakers. Well, I've tackled it! And I may try a drizzle of honey on mine as well. Feel better! I hope you're off the soup soon!

nina - LOL! That would be fun! I actually taught my friend to bake and we had a great time. We made cookies and scones and now she's making all kinds of things.

nance - The muffins are almost gone, so I'll be making some more in the next week or so. I'll do a Part 2.

Oh, I'm a waffle girl! Please tell me the recipe! But I only have a regular waffle maker, will that be okay or do I need a special Belgian one? Or is it the recipe that makes it Belgian and not the waffle maker? I have no idea.

starry nights - Great to see you back! I hope your sister is doing well. You have a good weekend too!

so simple - Your doll sounds beautiful! I hope you try the muffins and do a post!

kaylee - PB&J sounds very good! It's interesting how everyone likes their English muffins a little bit different from everyone else. Sort of like an ice cream sundae. Nobody makes them the same way!

bipolarlawyercook - That sounds good! Like a specialty Egg McMuffin. And breakfast for dinner is just so comforting! I don't know why...

sanjay - You're so sweet! Thanks about the muffins and my back. : )

Again, you impress with the kitchen skills! However, I see someone just had to dive into it before taking the picture (lol).

Get better soon!

BTW - like that little doll - I have a little nappy head boy doll to match from my youth. Think it was from the Kenneth and Barbara set. (really)

Happy Sipping!
KAYLEE said…
yes that is interesting:)
Lisa Johnson said…
dezel - Thanks! And you're right, I couldn't resist it!

That's so funny about the doll set! Hey, I wonder if these are collectibles? Could we make our fortunes by selling these as a set on ebay!!?? : )

kaylee - : )

Anali,

Hubby loves English muffins...aren't they also called crumpets or have I mixed them up? He loves to toast them and usually puts a pat of butter on them followed by a nicely-shaped fried egg, lol. That's his Sunday breakfast. Ofcourse, the muffins are always store bought...I won't dare trying making any, I lack your kitchen courage Anali!
Lisa Johnson said…
pom d'api - Welcome! Thank you!

lotus reads - I just looked up crumpets in my food dictionary to check and you were right! They are the same. Hey! I made crumpets and I didn't even know it! ; )
Barbara said…
No NO anali crumpets are quite different. Crumpets are cooked on one side and the top then has lots of little holes. Perfect for holding lots of butter.
Lisa Johnson said…
barabara - Thanks for the correction! Oh crumpets have nooks and crannies! Interesting, because store bought English Muffins here have nooks and crannies, but when I made mine, there were none, well maybe one or two.
