Single Serving Chocolate Chip Cookies
This might be the year of the single serving dessert. Just a couple of weeks ago, I discovered the Nutella Chocolate Mug Cake. A freshly baked slice of cake in minutes. Genius!
Then just yesterday, my life was shaken to the core again. On Pinterest, I found a recipe for a single serving of chocolate chip cookies. I made a few changes to the recipe. The big one being cutting the amount of brown sugar in half. Usually the ratio is one to one brown to granulated and less sugar is always healthier. Not that these are healthy, but little things can add up.
Also, I made five regular size cookies instead of two gigantic ones. If I made them each just a bit smaller, it could have worked out to a cool half dozen. Which could be two servings of cookies, if you have some restraint or want to share them with someone. Maybe next time.
Unlike the mug cake, where you save a lot in the baking time by using the microwave, I found that these cookies take about as much time as if you made a standard recipe for two dozen. It's so quick to whip up a batch anyway. So you're not saving time, but saving temptation. Less cookies to devour, but just as delicious.
Single Serving Chocolate Chip Cookies
(makes 1/2 dozen cookies)
Ingredients:
- 2 T softened Smart Balance (butter, margarine)
- 1 T brown sugar
- 1 T granulated sugar
- 1 egg yolk
- 1/4 tsp. vanilla extract*
- pinch of salt
- 1/4 cup flour
- scant 1/4 tsp. baking soda
- 3 T chocolate chips
- 1 T sweetened coconut flakes
Instructions:
Set oven to 350 degrees and take out a baking sheet. I used parchment paper, because it looks prettier for the pictures and is easier for cleaning up. But generally, I don't use it for cookies. It's up to you.
Combine the ingredients as you like in a small bowl. Scoop out the dough by the tablespoon for six cookies or make two mega cookies like in the original recipe. Bake for 10-12 minutes. After removing the cookies, I forgot to do the counter top bang like the recipe says. Wow. That sounds wrong. But maybe I'll try it next time. Anywaaay....

*Updated 1/26/2013* I forgot the vanilla extract and just added it. Sorry about that! Hopefully no cookies were ruined!
