Random Meal Tip: Meatloaf Makeover

A few months ago, I received a surprise box full of goodies from El, a very creative and generous lady who strongly supports the New England food community.

Two of the items are Root Cellar Preserves Sweet Corn Relish and Butternut Mountain Farm Vermont Maple Syrup Barbecue Sauce.

I wasn't quite sure how I'd use them, but last night I made a turkey meatloaf and used the corn relish and barbecue sauce to really pump up the flavor. I don't use a recipe, but improvise as I cook.

Also, I don't eat most meats, just poultry and seafood. I've tried a few brands of ground turkey. Most all ground turkey is fine, even store brands. I also sometimes buy turkey bacon.

There is one brand however, that I absolutely do NOT recommend. I did not like the flavor at all the first time that I tried it several years ago. I thought it was a fluke, so I bought it again. Silly me. I still did not like it and have never gone back.

That is just my opinion. Maybe some of you might like it, but if this brand is the one that you tried and you didn't like it, try a store brand, Perdue, or Butterball, which taste really good and I highly recommend.

Usually I add some combination of dried oregano, basil, Trader Joe's Lemon Pepper, chopped onions, and any other spice or herb that might catch my eye at the moment. This time instead of adding chopped onions, I added about a half a cup of the corn relish along with the other seasonings.

When I was a kid, my mother always topped her meatloaf with a bit of catsup, so I usually do the same. This time I used the barbecue sauce and used a lot of it. Then spread it like frosting over the top. The flavor of this meatloaf was out of this world!

It really does pay to experiment with different flavors and ingredients. I hope you'll try it! If you do, please let me know. Also, do you have any surprising uses of flavors and ingredients?

Sounds delish. I've done turkey meatloaf w salsa and made my own topping with crushed tomatoes and herbs. I've also done one with sauteed spinach and mushrooms in it.
