Got Rice Milk?


Yup! I always do! As I write each of my recipes, I sometimes wonder if any of you might wonder why I'm always using rice milk and vanilla rice milk at that. So I thought maybe I should do a post explaining it a little bit.

I have nothing against dairy products nor do I have a dairy allergy. I eat yogurt almost daily. I love frozen yogurt and ice cream. I love cheese. Eggnog is my holiday weakness and I generally use Half & Half in cooking in place of whole cream. I like milk.

Over time, I started thinking about the amount of fat and dairy in my diet. I had already given up all meats except for poultry and seafood. I love cheese and yogurt too much to give up. And I think they have some health benefits. I used regular milk in cereal and to drink with cookies and other desserts. I started hearing people talking about how too much dairy was bad and the amounts of hormones in milk, etc. So I decided to look for some alternatives.


I tried soy milk for a while. I like the taste and have nothing against it, but I already eat a fair amount of soy. From some reading, it seems that too much soy may cause hormonal changes.

I'm not a doctor and have no real confirmation of what I've been reading, but drinking soy milk seemed to be a bit too much soy for me personally when there are alternatives. Almond milk is good, but expensive and most stores don't make their own brand. I've found that most stores have their own brand of rice milk, so it's fairly cheap.

I keep vanilla rice milk in the fridge, just like I would regular milk. I always buy the vanilla flavored and vitamin and calcium enriched rice milk. You can buy the plain flavor. I just don't like it. I like the taste of vanilla. I drink it plain and use it in baking and cooking, from cakes to ice cream to soup. Also, you can buy the non-enriched rice milk; it's just not my preference.

I don't recall ever seeing rice milk at my grocery store. But then again, I'm not usually the one who buys the milk because if I'm being honest, I hate milk. I can't stand the way it tastes and I absolutely loath the way it smells. I feel quite guilty not drinking milk, being pregnant and all. But I just use the excuse of not liking milk to eat more cheese. :)
**I actually did drink a small glass of milk a week or so ago because I had heartburn so bad...it helped. It was disgusting.

I see you're reading the Audacity of Hope. Are you loving it? I couldn't read that book fast enough

I like rice milk sometimes. Sometimes it can be watery and weird, but when it is good it's really good. There's one brand I really like...I only know it by sight though. Not very helpful I guess, but I found your post interesting!

nina - It's usually in the natural food aisle. You really might enjoy the vanilla rice milk. Give it a try, especially the calcium enriched! Of course, check with your doctor first. I don't want to cause any problems! : )

I just started reading the book. It really is inspirational and I'm so excited about the primary in NH tomorrow. Well, today now actually!

cakespy - A few years ago, I used to sometimes get a weird batch of rice milk, but it seems to be much improved. I'm glad you liked the post! As you can see, I had some fun with it!

I'm a water drinker, myself. I never drank much milk, even when I was pregnant--oh, the guilt! I'll grab a small container of the vmr and give it a try.
Okay: I love this post. We live for rice milk here, just because it's nummy!! Just tonight, I made chocolate cookies and they got dipped in the rm.

i am also freaked out by the amount of hormones in milk, but rice milk doesn't have the same feel for me... maybe i need to try it more and get used to it. my compromise is to always buy organic dairy (milk + yogurt).

amisha - Thanks! It was so fun and goofy to do it! I think that by the time that I changed to rice milk, I had already switched from regular milk to skim milk over time, so it wasn't as big a leap from whole milk. That would probably take longer to get used to.

cynthia - That's really common, so it's great that there are so many alternatives now. My brother used to have a milk allergy and would break out into hives. He seems to have grown out of it though.

Mustache notwithstanding, that is a gorgeous picture of you. You look relaxed and very happy.

I've been playing with almond milk, unflavored, unsweetened, in my muffins. Things come out flatter than with dairy milk, I guess due to some interaction between the proteins and the glutens, but they taste just fine.

bipolarlawyercook - Awww, you're so sweet! : ) I guess I really need to read up on the science of glutens and different types of liquids. So many unexpected interacions. Although like you said, most of my experiments have worked out pretty well too.
