I'm Not Bluffing. I Made English Muffins.
I love Kim O'Donnel's food blog on washingtonpost.com. She always has something new and an interesting story too. Recently she had a recipe for English Muffins. Check it out here. Kim adapted a recipe from a blog winosandfoodies.com, which is written by Barbara Harris. And Barbara found the recipe from another place... Well, you get the picture. This recipe is making its way around the world, with a few changes as it crosses time zones.
I would have never thought to make my own English Muffins. I don't know why. I guess because I buy them on a somewhat regular basis. My favorite kind is Thomas' Honey Wheat. I usually put peanut butter on them for a snack or breakfast. I just tried their bagel bread recently and it's pretty good too. And no, unfortunately I'm not receiving any money from Thomas' for this post. I've noticed that English Muffins are getting rather expensive unless they are on sale and I haven't been buying them as much. When I saw this recipe, it looked fairly simple and I figured that I would adapt it to make honey wheat.
I think I made the dough Tuesday night. I still didn't feel too great on Monday. I hurt my back a couple of weeks ago and had a shooting pain from my back down my left leg. I'm feeling better, but I've still been trying to take it easy. I let the dough rise overnight, so it wouldn't be so much work to do all at once. To adapt the recipe, I used 2 cups all-purpose flour and 1 cup whole-wheat flour. I used one packet of yeast, which I don't think was enough. I'm going to try two next time. I changed the liquid portion to 1/4 cup honey, 1/4 cup milk and 3/4 cups of water.
The dough didn't rise that much, so the muffins are a little flat, but they still taste really good. And sadly, there are no nooks and crannies. Maybe next time.

and i am amazed that you made english muffins! for some reason that is a baked good i always considered out of my league... like bagels... strange! i love them with butter and a drizzle of honey. yum!

Never thought about making english muffins but I am now tempted. Thanks to Barbara and Kim. What a dick Don Imus is...there has been a lot about him on the talkback radio here. I know people love Shock Jocks but what did those women do to deserve that venom.
By the way an English relative sent me a black doll in the early 50's. It was dressed in a pale blue silk dress and a white with blue edged crochet hooded cape. I loved it. It was so unusual, I was the toast of my friends.
I hope your back feels better soon, they just take a while to heal. :-/

amisha - I don't know why English muffins seem so daunting, but I guess most of us felt the same way about them. It is strange, especially for those of us who are bread bakers. Well, I've tackled it! And I may try a drizzle of honey on mine as well. Feel better! I hope you're off the soup soon!
nina - LOL! That would be fun! I actually taught my friend to bake and we had a great time. We made cookies and scones and now she's making all kinds of things.
Oh, I'm a waffle girl! Please tell me the recipe! But I only have a regular waffle maker, will that be okay or do I need a special Belgian one? Or is it the recipe that makes it Belgian and not the waffle maker? I have no idea.

kaylee - PB&J sounds very good! It's interesting how everyone likes their English muffins a little bit different from everyone else. Sort of like an ice cream sundae. Nobody makes them the same way!

Hubby loves English muffins...aren't they also called crumpets or have I mixed them up? He loves to toast them and usually puts a pat of butter on them followed by a nicely-shaped fried egg, lol. That's his Sunday breakfast. Ofcourse, the muffins are always store bought...I won't dare trying making any, I lack your kitchen courage Anali!
lotus reads - I just looked up crumpets in my food dictionary to check and you were right! They are the same. Hey! I made crumpets and I didn't even know it! ; )
