Obama Celebration Cake!


What an amazing time to be alive, to be an American, especially a black American. I don't have the words to convey how happy I am that Barack Obama is the Democratic Nominee - and hopefully the next President of the United States. I think that he will do great things for our country.

Just as an aside, when G and I first started watching Obama's speech last night, for some reason we had on Fox News. I didn't notice until I saw the way they were describing what was happening. The wording was something like Obama says that he is the nominee. I pointed that out to G and said that sounds like he is just making the whole thing up. He isn't just claiming it! He is! I noticed that it was Fox and we turned to Channel 56 where they stated that Obama had clinched the nomination. Big difference.

Back to the celebration. What better way to celebrate Obama's win, but with cake? I actually made this cake last week and have been planning to post it. I found the base recipe here for a Scandinavian Brownie. I'm not the best with layer cakes, so I searched for a single layer chocolate cake recipe and then made a bunch of changes. I loved this cake and so did G. These are his exact words. "Oh my God! You have started a revolution!"

When I made this cake, I didn't know that I would be posting it to celebrate Obama's win, but I guess a revolutionary cake is quite appropriate for a win that changes history.

Obama Celebration Cake
(adapted from CacaoWeb)

1 1/3 cups flour
1 1/4 cups sugar
1/4 cup unsweetened cocoa powder
1 tsp. baking powder
1 tsp. vanilla extract
1/2 cup Earth Balance
1/3 cup vanilla soy milk
2 *eggs*
scant 1/4 tsp. sea salt
2 soft bananas

In medium (microwave safe) bowl, add Earth Balance (EB) with soy milk. Microwave until EB is melted and soy milk is warm. Add bananas to liquid and mash with fork. Add sugar, vanilla, *eggs*, and cocoa powder and stir well. Add flour, salt, and baking powder. Stir well.

Grease and flour one round cake pan. Line cake pan with parchment paper or cut out a circle of wax paper, which is what I did. Bake at 350 degrees for about 40 minutes.

Glaze
1 1/2 cups powdered sugar
2-4 T Southern Comfort (depending upon your taste)
2 T Earth Balance
1 T vanilla soy milk
1 pinch sea salt

Melt EB and combine all ingredients in medium bowl. Add more or less soy milk or Southern Comfort to get the correct consistency and taste for you. Set aside.

I think that the only thing keeping this cake from being vegan is the *eggs*. I may try to substitute with two more bananas next time or maybe a little more EB. If anyone tries a vegan version of this cake, please let me know how it comes out.

Let cake cool before removing from the pan, then spread glaze on top of cake. The glaze will drizzle over the sides. Top with a few almonds. Enjoy and Congratulations Barack Obama!

I came to your page today because I knew that it would be Obama-esk. I agree with you, what a wonderful time to be an American!!! It's really something special to be a part of.

I'm keeping a journal for the baby to give to him as an adult. I was almost in tears as I wrote about the importance of Obama's nomination, not only for America but for Black America. This is truly an amazing time.

Isn't that typical of Fox News? I am absolutely thrilled about Obama, and I think I'll have to make that cake to celebrate!

amisha - He's helping to restore faith for so many of us. That must be a great load for one person to bear though...

plez - Oh I hope you try it and blog about it! In the recipe, if you click on Earth Balance in the list of ingredients, it will take you to their website. It's just a vegan butter substitute. I can't use dairy in my baking anymore, so this is really good. You could use butter or margarine though.
